2. Place about 1/2 cup of oil in a small sauce pan and let it get hot. Place a few of the strips in the oil and stir occasionally until they are crispy and lightly brown. Remove from oil and sprinkle with salt, taco seasoning or chili lime seasoning. Just add the flavor you are trying to get with your meal.</div>

<u>Healthy Copycat Applebee's Oriental Chicken Salad</u><br />
<u><br /></u>
Salad:<br />
1 head of romaine, chopped<br />
1/2 head cabbage, chopped<br />
2-3 carrots, shredded or julienne<br />
Slivered Almonds<br />
Chow Mein Noodles<br />
Green Onion, optional<br />

Chicken:<br />
This is were I made the alterations. You can fry or bake the chicken. I baked the chicken.<br />
1 egg<br />
1 Tbsp Milk<br />
2-3 chicken breasts<br />
1/2 cup corn flakes, shhh I used bran flakes :)<br />
1/2 cup flour<br />
1 tsp salt<br />
1/4 tsp pepper<br />
<br />
Mix egg and milk together in a bowl. In a separate bowl add the flour, salt and pepper. On a plate lay out your flakes and crumble. I like to pound my chicken out so its even through out. Dip your chicken in the egg, dip in flour and roll around in the bread crumbs. Bake at 350 for 30 minutes or until juices run clear. When done let chicken rest for a 3 minutes then slice.<br />

Dressing:<br />
This dressing was great, I really think the sesame oil really brought out the flavors. I'm thinking I just need to make this recipe on a more regular basis. Also I would even double the recipe, I like alot dressing with my salad.<br />

3 Tbsp Honey<br />
1 1/2 Tbsp Rice Wine Vinegar<br />
1/4 cup Light Mayo<br />
1 tsp Dijon Mustard<br />
1/8 tsp Sesame oil<br />

On a plate lay out your lettuce and cabbage. Add your carrots, almonds and chow mein noodles. Next pile on your chicken. <u>Homemade Calzones with Pizza Sauce</u><br />
<u><br /></u>
Dough:<br />
1 cup 2 Tbsp hot tap water<br />
1 Tbsp Olive Oil<br />
3 cups flour<br />
1 tsp sugar<br />
3 tsp salt<br />
2 1/2 tsp yeast<br />
<br />
In a medium sized bowl add the hot water, yeast and sugar and lightly stir and let sit for 5-10 minutes until foamy. Slowly add flour 1 cup at a time. Add salt after first cup of flour and continue with the rest. Knead by hand until well combined and dough is soft and bouncy to touch. Form dough into a ball and place in bowl. Spread oil on top. Cover and let rise for 2 hours or until doubles in size.<br />
Makes about 4-8" calzones. Dough freezes well.<br />

Toppings:<br />
Meat: Pepperoni, ham, chicken, bacon, sausage<br />
Veggies: Peppers, onions, mushrooms, olives, tomatoes<br />
Mozzarella Cheese<br />
Spices. red peppers or italian seasoning<br />

Split dough into 4 equal balls and roll dough out to about 8" circle. On half of the dough lay out your meat, top with cheese and then your veggies. Fold the top over and pinch the sides together. Cut 3 small slits on the top. Bake on the bottom shelf at 425 degrees for about 10-12 minutes. Serve with warm pizza sauce and enjoy. If you have a pizza stone use it! If don't have one a baking sheet will be fine.<br />

<u>Pudding Snickerdoodles</u><br />
<u><br /></u>
1 stick butter, softened<br />
1 1/2 cup sugar<br />
2 1/2 cups flour<br />
3 eggs<br />
1 pkg vanilla instant pudding mix<br />
2 tsp cream of tarter<br />
1 tsp baking soda<br />
1/4 tsp salt<br />

For the topping:<br />
3 Tbsp sugar<br />
2 tsp cinnamon<br />
<br />
Cream butter, sugar and eggs together until combined. Add the remaining ingredients together until well blended. Cover and place in fridge for 2 hours or overnight.<br />
Preheat oven to 375 degrees. in a small bowl combine sugar and cinnamon. Roll cookie dough into 1" balls and roll in cinnamon sugar mixture. On a greased cookie sheet bake for 10 minutes. Cool on wire rack.<br />
*Do not over cook, they are meant to be chewy and soft. 1 cup uncooked long grain rice<br />
1 tsp minced garlic<br />
1 tsp fresh lime juice<br />
1 can chicken broth<br />
1 Tbsp fresh lime juice<br />
2 tsp sugar<br />
3 Tbsp chopped cilantro<br />
<br />
In a saucepan or rice cooker combine rice, chicken broth, 1 tsp lime juice. Cook until rice is tender. In a small bowl combine remaining lime juice, sugar and cilantro. Pour over rice and stir.<br />

I actually used minute rice (I was starving and didn't want to wait 20 minutes) I just adjust to the right liquid proportions I also didn't use a can of chicken broth. I have a huge Costco container of Knorrs Chicken Boullion so I just added 1 Tbsp to the water. Turned out PERFECT!! <u>Chocolate Zucchini Bread</u><br />

2 eggs<br />
1/3 cup honey<br />
1/2 cup oil<br />
1/2 cup brown sugar<br />
1 tsp vanilla<br />
1 tsp salt<br />
1/2 tsp baking soda<br />
1/2 tsp baking powder<br />
1/3 cup cocoa<br />
1 2/3 cup flour<br />
2 cups grated zucchini, with skin<br />
1 1/4 cup chocolate chips<br />

In a mixing bowl add the first 10 ingredients together, using a hand mixer until well combined. Stir in by hand the zucchini and chocolate chips. Place in a well greased loaf pan and bake at 350 for about 65-70 minutes. Test with a toothpick to make sure bread is completely done. Let cool for 15 minutes then remove from loaf pan to continue cooling. You can also garnish the top a few more added chocolate chips.<br />

<u>Honey Lime Chicken Skewers</u><br />

3 chicken breasts<br />
3 Tbsp soy sauce<br />
2 Tbsp Honey<br />
1 Tbsp Olive Oil<br />
juice from 1 lime<br />
2 garlic gloves<br />
1-2 tsp Siracha hot sauce<br />
dash red pepper flakes<br />

Cut chicken breasts into chunks and set aside. In tupperware container add all the ingredients and mix; add chicken. Then shake shake and let the juices marinate. I would highly recommend marinating a few hours or overnight to get the full flavor. Stab the chicken with skewers and place on barbecue and cook until juices are clear. When done squirt with some more lime juice and of course add more cilantro.<br />
Serve with white rice of even add some peppers and onions to the skewers<br />

<u>Crockpot Honey Sesame Chicken</u><br />

3-4 chicken breasts<br />
salt and pepper, to taste<br />
1 cup honey<br />
1/2 cup soy sauce<br />
1/2 cup diced onion<br />
1/4 cup ketchup<br />
2 Tbsp oil<br />
2 garlic gloves<br />
1/4 tsp red pepper<br />
4 tsp cornstarch<br />
6 Tbsp water<br />
1/2 tsp sesame seeds<br />
2 scallions, optional<br />

Season chicken breasts with salt and pepper. In the crockpot add the honey, soy sauce, onion, ketchup, oil, garlic and red pepper and stir. Add the seasoned chicken. Cook on low for 4-5 hours. When done remove chicken and shred and set aside. In a small bowl add the water and cornstarch together and mix, then add to the sauce in the crockpot until thickened. Either add the chicken back into the sauce or you can drizzle the sauce on top of the chicken.<br />
Serve with rice or noodles.<br />

This recipe was really tasty but I thought it was really salty. I usually use reduced sodium soy sauce but I was at Costco and bought the wrong kind...dang-it! So I would recommend either using less soy sauce or use the reduced sodium, other then that it was a great meal.<br />

5-6 pounds potatoes, peeled and diced<br />
2 Tbsp butter<br />
2 Tbsp Milk<br />
1 Ranch Dressing Packet<br />
1/4 cup bacon<br />
1-2 green onions, chopped<br />
1/2-1 cup Cheddar Cheese<br />
<br />
Peel potatoes and boil in a pot of water until soft, drain water and place in a bowl. With a mixer cream potatoes together with the butter, milk and ranch packet until smooth. Place potatoes in a sprayed casserole dish. Add cheese, bacon and green onions on top of potatoes and place in oven and cook at 350 for 20 minutes or until cheese is melted.<br />

You can also add cream cheese or use sweetened condensed milk to make your mash potatoes a little bit more creamy.<br />

Lay green beans out on cookie sheet; I lined mine with tin foil for easy clean up. Drizzle olive oil over the beans. Sprinkle with salt, pepper and garlic powder. Place in oven at 425 for 10 minutes. Remove from oven and lightly turn them over. Place back in oven for about 5-8 more minutes. Remove from oven again and sprinkle with cheese. </div>

<u>My Notes:</u><br />
This recipe makes a lot of sauce so I placed the extra sauce in ice cube trays and froze. When frozen I popped out and placed in a ziploc bag. Put in microwave for a few seconds to defrost when needed. Stays fresh in air tight container for 2 weeks in fridge or 3 months in freezer.<br />

There many options you can add to these crepes. You can roll them up or stack them up high. Fill with fruit, Nutella, powder sugar, Cinnamon sugar or eat like a pancake cover in syrup.</div>

<u>Breakfast Crepes</u><br />
<u><br /></u>4 eggs<br />
1/2 cup milk<br />
1/2 cup flour<br />
1/3 cup oil<br />
7 tbsp sugar<br />
1 tsp salt<br />

Combine all ingredients together, will be slighlty lumpy. In a frying pan lightly grease. When heated add a little bit of the mixture. Let cook until the edges start to fold up, then flip over.<br />

This is actually my second time attempting to make this recipe. I'm still learning on how to cook these noodles. The soaking process is a little more complicating then you would think. They either didn't work or they went mushy. So don't give up if your noodles don't work the first time.</div>

I also made the mistake of getting my noodles at the Asian market, who knew the directions wouldn't be in English. So it helps to get them at a local grocery store :)</div>

<u>Vegetarian Pad Thai</u><br />
<br />
8 ounces flat rice noodles (Pad Thai noodles)<br />
1/4 cup brown sugar<br />
2 Tbsp soy sauce<br />
1 Tbsp Sriracha or chili sauce<br />
2 Tbsp water<br />
1 Tbsp olive oil<br />
1 tsp chopped serrano pepper<br />
2 large eggs<br />
1 garlic glove, minced<br />
2 cups bean sprouts<br />
1/4 cup green onion, chopped<br />

Cook noodles according to package directions. In a bowl combine brown sugar, soy sauce, Sriracha, water and ginger mix together and set aside. In a frying pan heat the oil and add the eggs and serrano pepper, cook until scrambled. Add the noodles and sauce mixture, cook for 2 minutes. Stir in bean sprouts and green onions and cook until thoroughly heated.<br />
<u><br /></u><u>My Notes:</u><br />
