I love banana bread! So since it was crappy weather and I had some bananas starting to get really ripe. I decided to make some bread. I thought it would be fun to actually bake using my bundt pan.
It's confession time, I have actually never baked using my bundt pan!
I know its pretty lame. So now I can finally say I have used it and it was worth the purchase.
I think its a fun twist then the usual bread loaf pan.
Bananas 'n' Cream Bundt Cake
Adapted from Taste of Home
1/3 cup shortening
1 1/4 cups sugar
2 eggs
1 tsp vanilla
1 1/4 cups mashed ripe bananas, about 3 medium
2 cups flour
1 1/4 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup sour cream
3/4 cup walnuts, optional
In a large bowl, cream shortening and sugar until light and fluffy. Add the eggs, one at a time beating well together. Add vanilla. Add bananas and mix well. In a separate bowl combine flour, baking powder, baking soda, and salt. Add to the creamed mixture alternating with the sour cream. Stir in walnuts.
Pour into a greased and floured bundt pan. Bake at 350 degrees for 50-55 minutes. Let cool for 10 minutes before tipping over to cool completely.

This recipe was so good I would not make any adjustments.
