Easy Homemade Blueberry Muffins

With me working every other weekend and when we actually have a weekend home together I like to make breakfast.  I usually make a big breakfast but on this day I wanted something delicious and quick! 
When certain fruits come on sale for a great price I like to buy them and freeze them.  I think they taste better then the frozen kind you buy at the store.  Since I needed to start using up my stash of frozen fruit I settled on making muffins.  
Don't get me wrong Betty Crocker can make a nice mix but I wanted to make the real deal.  This recipe was fantastic!  Me & the hubby loved them.  I wish I had more berries now so I could make some tomorrow!



 Easy Homemade Blueberry Muffins
Recipe makes 8 muffins

1 1/2 cups flour
3/4 cup sugar, plus a 1 tsp for muffin tops
1/2 tsp salt
2 tsp baking powder
1/3 cup vegetable oil
1 egg
1/3 milk
1 1/2 tsp vanilla extract
1 cup blueberries-Fresh or Frozen, not thawed

Preheat oven to 400 degrees. Combine flour, sugar, baking powder, and salt in bowl and mix well.  In a separate bowl add oil, egg, milk and vanilla.  Add liquid mixture to dry ingredients.  Mixing with a fork stir just until combined.  Add in blueberries and lightly stir.  Place batter in muffin tins and sprinkle remaining sugar on the top of each muffin and bake for 20 minutes.
