Double Chocolate Zucchini Bread

I'm sure every one has an abundance of zucchini like I do!  I love zucchini bread but when I saw this recipe floating around Pinterest I knew I needed to give it a try...because everything is better with a little bit of chocolate or a lot of chocolate!


Chocolate Zucchini Bread

2 eggs
1/3 cup honey
1/2 cup oil
1/2 cup brown sugar
1 tsp vanilla
1 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1/3 cup cocoa
1 2/3 cup flour
2 cups grated zucchini, with skin
1 1/4 cup chocolate chips

In a mixing bowl add the first 10 ingredients together, using a hand mixer until well combined.  Stir in by hand the zucchini and chocolate chips.  Place in a well greased loaf pan and bake at 350 for about 65-70 minutes. Test with a toothpick to make sure bread is completely done.  Let cool for 15 minutes then remove from loaf pan to continue cooling. You can also garnish the top a few more added chocolate chips.

  2. We love zucchini bread around here! This recipe looks like it will be a winner for my chocolate loving family! I am going to experiment and try to make it egg free (allergy), good thing we also have an abundance of zucchini.
