Healthy Copycat Applebee's Oriental Chicken Salad

I was going through my recipe box and I just happen to have came across this recipe.  I don't think I have made this recipe in years!  Every time we do happen to go to Applebee's I always order the Oriental Chicken Salad, but of course it comes with the fried chicken.  In my efforts to watch our weight I made some slight modifications to this delicious recipe...and it was just as delicious!


Healthy Copycat Applebee's Oriental Chicken Salad

Salad:
1 head of romaine, chopped
1/2 head cabbage, chopped
2-3 carrots, shredded or julienne
Slivered Almonds
Chow Mein Noodles
Green Onion, optional

Chicken:
This is were I made the alterations.  You can fry or bake the chicken. I baked the chicken.
1 egg
1 Tbsp Milk
2-3 chicken breasts
1/2 cup corn flakes, shhh I used bran flakes :)
1/2 cup flour
1 tsp salt
1/4 tsp pepper

Mix egg and milk together in a bowl.  In a separate bowl add the flour, salt and pepper. On a plate lay out your flakes and crumble.  I like to pound my chicken out so its even through out.  Dip your chicken in the egg, dip in flour and roll around in the bread crumbs. Bake at 350 for 30 minutes or until juices run clear. When done let chicken rest for a 3 minutes then slice.

Dressing:
This dressing was great, I really think the sesame oil really brought out the flavors.  I'm thinking I just need to make this recipe on a more regular basis.  Also I would even double the recipe, I like alot dressing with my salad.

3 Tbsp Honey
1 1/2 Tbsp Rice Wine Vinegar
1/4 cup Light Mayo
1 tsp Dijon Mustard
1/8 tsp Sesame oil

On a plate lay out your lettuce and cabbage.  Add your carrots, almonds and chow mein noodles.  Next pile on your chicken.  Start drizzling on your salad dressing and enjoy immediately!

  3. I have never had the salad at Applebee's, but this looks delicious! I have always just grilled the chicken. It never dawned on me to make it crunchy :)
