I have been CRAVING some snickerdoodle cookies for months now!!
I remember eating these all the time when I was little and I can't even remember the last time I actually baked them.
Now that I have finally discovered my new passion for pudding cookies I decided to give this recipe a try; using of course pudding!!
And if you haven't jumped on the cookie pudding wagon, then you must start now!
Well of course they were fantastic and chewy, the way a snickerdoodle cookie is meant to be!!
Pudding Snickerdoodles
1 stick butter, softened
1 1/2 cup sugar
2 1/2 cups flour
3 eggs
1 pkg vanilla instant pudding mix
2 tsp cream of tarter
1 tsp baking soda
1/4 tsp salt
For the topping:
3 Tbsp sugar
2 tsp cinnamon
Cream butter, sugar and eggs together until combined. Add the remaining ingredients together until well blended. Cover and place in fridge for 2 hours or overnight.
Preheat oven to 375 degrees. in a small bowl combine sugar and cinnamon. Roll cookie dough into 1" balls and roll in cinnamon sugar mixture. On a greased cookie sheet bake for 10 minutes. Cool on wire rack.
*Do not over cook, they are meant to be chewy and soft. They may not look done, but trust me they are done!

ReplyDeleteOh snickerdoodles, the most comforting of all comfort foods :) I love the pudding in this recipe. I bet it makes them so deliciously chewy. We've been making snickerdoodles with brown butter and it has totally elevated them to a new level!

Love snickerdoodles! They are great soft or chewy. I'll have to keep this in my recipe archive for a day when I'm off my diet and find someone to share them with so I don't eat the whole batch :).
