We love tacos in our home!! I bet we have them at least 2-3 times a month. Well this time I wanted to try something different for taco night. I love Taquito's and it never occurred to me to make them myself. I think this recipe is fantastic! My husband even approved the change in taco night and loved these. I cant wait to make them again, maybe with shredded beef next time!
Baked Chicken Taquito's
2-3 chicken breasts, boiled and shredded
3 ounces soft cream cheese
1 Tbsp lime juice
1 tsp chili powder
1/2 tsp cumin
1/2 tsp onion powder
3 Tbsp fresh chopped cilantro
1 Tbsp fresh minced garlic
1 cup shredded cheddar cheese, I used sharp
1 package corn tortillas or flour
sour cream, optional
salsa, optional
guacamole, optional
Combine all ingredients together in a bowl and set aside. Warm corn tortillas 1 at a time in between two damp paper towels and heat for 30 seconds. This helps the tortillas from cracking when you roll them. Spread chicken mixture in the tortilla, about 2 Tbsp and roll. I used a toothpick to help keep the tortillas together. Place seem side down and bake on a sprayed cookie sheet at 350 for 10-12 minutes.
Bake longer if you want it extra crispy.
Serve with sour cream, salsa and my personal favorite guacamole!
My Notes:
When I was boiling the chicken I added about 1 Tbsp of taco seasoning to the water for a little added flavor to the chicken.
