Chewy Coconut Chex Mix

During the summer we have lots of road trips and camp outs with friends and family.  Of course when you go out of town the diet goes out the window but who really cares is my motto!  We were getting ready to head down south for a family reunion and I just knew I needed to make this.
  I personally need to have all sorts of snacks in the car....I personally think it helps the drive go by faster.  Snacks are always great to be around when you sit outside and play cards, hang out at the fire or just relax and just eat a variety of snacks and have a good time with friends.


Chewy Coconut Chex Mix

1 large box chex mix, Corn or Rice
1 1/2 cups mixed nuts
1 1/2 cups coconut
3/4 cup butter
1 1/2cups sugar
1 1/2 cups corn syrup
 1/8 tsp baking soda

In  large bowl combine chex, nuts and coconut and combine.  In a sauce pan combine butter, sugar and corn syrup. Cook until sugar is dissolve about 5 minutes.  Cook on low for an additional 2 minutes, then add baking soda. Pour half on top of chex mixture and stir and then pour the rest on top and stir until well covered.  Lay out on cookie sheet to cool off.
Store in Ziploc bags or Tupperware container.
