HOMEMADE BRAN MUFFINS

These muffins have been a family favorite recipe...well not when I was younger.  I preferred to have blueberry muffins over a bran muffins.  Well since im no longer 12 I thought I would give these another try.  I was trying to increase my fiber intake and these came to mind.  I absolutely love them now and eat them all the time.  I personally rather have a muffin at breakfast then eat oatmeal, but that's just my opinion.




Mix 2 1/2 tsp baking soda to 1 cup boiling water and set aside

Beat together with mixer
1/4 cup shortening
1 cup sugar
2 eggs or 4 egg white-I always do egg whites

then add:
2 1/2 cups flour
1/2 tbsp salt
2 cups buttermilk
soda water
2 cups All Bran cereal
1 cup 40% bran flakes

I mixed the cereal in by hand.  Let sit for about 1 hour. Stir every 20 minutes so cereal gets absorbed.  Bake at 350 for 12-14 minutes.

I usually bake a dozen and store the batter in my fridge and bake more when im getting low.  They are also great to freeze and have on hand at anytime.
